OMGOSH!!! Need to share this recipe!!!

First of all Kathleen I hope you are doing better. Sending positive energy your way.

I made these tonight and they were so good I needed to share the recipe.

8 thin chicken cutlets (3 oz each). I made my own. I took 4 (6 oz) chicken breasts cut them in half and pounded then down. Tip: put the chicken in-between two pieces of plastic wrap and pound a way with a meat pounder. LOL don't know the term for it.
1/2 cup whole wheat Italian seasoned bread crumbs. I got bread crumbs (100% whole wheat) from whole foods and added my own Italian seasoning to it.
1/2 cup fresh grated Parmesan cheese
2 TBL Parmesan cheese (the kind in the green shaker can)
1/4 cup + 2 TBL egg beaters
5 oz frozen chopped spinach, thawed and squeezed dry (I could only find a 10 oz package so I just used half and froze the second half)
1/2 cup ricotta cheese
2 cups grated mozzarella cheese
1 cup marinara sauce (check the label)
salt and pepper to taste.
Olive oil

Season the cutlets with salt and pepper. Preheat oven to 450 degrees F. Lightly spray baking dish

Combine breadcrumbs and 2 TBL Parmesan cheese in one bowl(I used the Parmesan cheese that you find in that green shaker can for this part; thought it would mix better with the bread crumbs and it did :h6) ) and 1/4 cup egg beaters in another bowl.

In another bowl mix 1 cup mozzarella cheese, 1/2 cup fresh grated Parmesan cheese, spinach, 2 TBL egg beaters and ricotta cheese. Mix well.

Spread about 2 TBL spinach mixture onto chicken cutlet. Role it up. Dip it in the egg and then role it in the bread crumbs. Place in pan seam side down. Do this with the remainder of the cutlets. Lightly spray the cutlets with olive oil. (this made it very nice and crispy). Will try this technique when I make chicken fingers next time.

Bake 25 minutes. Remove from oven. Top with Sauce and remainder of mozzarella cheese. Return to oven and bake for an additional 3 minutes or until cheese it melted.

I had already eaten my dinner this was meant for tomorrow's lunch and dinner but when I pulled it out of the oven at 10:00 tonight I just had to have some and that says a lot because I am not a huge eater and have a hard time finding foods I really want to eat. I ate some and it was AMAZING.
