There are several recipes for yam cakes. I know for me the recipes that have any type of flour in then (even program friendly flour) do not work; they put me right to sleep within about 20 minutes of eating them. I use the recipe that Elaine put together. It only has yams, George's restore, peanut butter and oats (I use the gluten free kind) and water. They are wonderful. I made a batch this weekend to have as my morning snack. one square of them is 19 grams of protein. The peanut butter I use I get from a store here where all it is is ground peanuts nothing else added. The store lets you grind them yourself and it is fun to do, even if it is just flipping a switch.
