Thanks for the warm welcome back. It's good to be here again - I really missed the decidedly safe and friendly tone of this forum. I've been posting on a dressage forum and people sometimes become really mean to each other for no good reason... That's actually what made me come back. I though - wait a minute, Kathleen would never allow this post.

Another yummy recipe I recently found is baked oatmeal. It's very simple:
3 cups rolled oats (I take gluten-free ones)
2 eggs (beaten)
1/4 quarter cup oil (less works, too)
1 cup almond- or soy milk
some vanilla- or other flavoring (a good dollop)
1 teaspoon baking powder
1/2 mashed banana / 1/2 cup applesauce
and/or 1/2 cup blueberries
Beat eggs, mix with oil and milk, combine with oats and baking powder, stir in fruit if desired, bake for 25 minutes at 350 F. Voila! Delicious and keeps well.
As you can see, I have retained a distinct love for program-friendly food and tweaking existing recipes to making them program-friendly.
