Red Cabbage slaw

Here's the recipe I promised. It's from a cookbook called "From Sheila's Kitchen" by my friend Sheila Burks. I usually double this recipe.

2 cups red cabbage, finely chopped
1 c carrot, grated (aout 2 carrots)
1/2 medium apple, chopped (I like granny smith)
3 T mayonnaise
2 T fresh lemon juice
1 tsp apple juice concentrate
1/2 tsp lemon pepper

Combine cabbage, carrot and apple in a bowl. Combine other ingredients in a small bowl, Mix well and pour over vegetables and apple. Stir well. Refrigerate for 1 hour to blend flavors.
