My blood sugar was really volatile for a long time. Instead of potato, I would have a protein / carb snack before bed, and that was really helpful for me. Also, along the protein amount of between .4 - .6, I eat in the .6 range for all of my meals...have you tried upping your protein and carbs at meals? And for a while, I was having a mid-morning, mid-afternoon, and evening protein / carb snack.
It sounds like you're doing a great job of listening to your body...and she just needs a bit more for now.
